Deep Waters Takedown Chef's Knife

From the exquisite damascus steel to the unique handle construction and inclusion of a one-of-a-kind mini hammer forged to accompany the knife and enable handle removal, each and every detail of this chef knife is thoughtful and elegant. Thin, light, and crafted with integral bolster construction at my Colorado studio, the blade is shaped from house-made, 320-layer carbon damascus steel that surrounds a cyclone mosaic damascus vortex at the blade's center, drawing the gaze of all those in its path. Superbly shaped convex bevel geometry slims to a fine, hard edge for cutting performance in a profile and size designed to tackle every cut in the kitchen. Thinning along the blade's spine to a fine, pointed tip, a touch of lateral flexibility is present in the final inches, the knife balancing a hair behind the blade's heel for a fast, nimble feel in the hand. Sculpted for comfort and control in a Western-inspired form, ebony wood is matched with a ring of titanium, the integral damascus bolster, and butt cap of a distinct damascus pattern which I created together with bladesmith David Lisch, to form the handle. Securing the butt cap in place are two interlocking elements of steel and titanium which, when removed using the handmade hammer, allows the handle to be disassembled for care and maintenance.
